There are few things more frustrating for well intentioned Moms than a baby or toddler who simply WILL NOT eat certain foods. For Teddy, that phase right now is a vegetable strike. With a few exceptions, his voluntary consumption of vegetables is limited to putting them in his mouth and immediately spitting them out and giving me a look that says “hard pass”.
So, operation Make Teddy Eat Vegetables went into effect a few months ago. Below is my recipe for a delicious balanced smoothie that Teddy eats (happily, eagerly) every single day. This way I know he is getting at least SOME veggies, and I’m less distraught when he tosses yet another bowl of carrots or tomatoes on the floor.
A few notables about this smoothie:
We swap out different fruit all the time, this is just the most popular combo for him.
He usually has it for breakfast. If we go out for breakfast, I give it to him as his post-nap snack instead.
I make enough for both of us to share….. we’re both getting our veggies! I pour his portion out, then add Vital Proteins Collagen Peptides to mine and re-blend.
For a more decedent “dessert” option, remove the spinach and add whole milk yogurt.
For a constipated babe, add prune juice.
I serve it in the Lollaland Lollacup – the size works well for his ideal portion, and the straw is wider than most.
I always make a little extra in case he’s extra hungry and asks for more. If he doesn’t, I drink the rest!
